Rava Upma / Roasted semolina - indian breakfast

Upma je indicke jedlo, ktoreho zakladom je krupica. Nazov je zlucenina dvoch slov v tamilskom jazyku: "sol" a "muka" = "uppu" a "maa(vu)". Jedlo pochadza z juznej Indie a podava sa na ranajky. Jedlo je vyzivne hlavne pre rastuce deti.
"Rava" je nazov pre krupicu, ktory sa vsak uz vacsinou nepouziva a mozno ju najst pod nazvami Suji alebo Semolina. Je to typicke jedlo aj pocas juhoindickeho festivalu Pongal, co je oslava zatvy.

CO POTREBUJETE:

1 lyzica Ghee / 1tbsp Ghee
1 maly hrncek krupice (pouzila som Rava for Upma alebo Fine rava - Suji, Semolina) / 1cup of fine rava
olej / oil
1 lyzicka horcicnych semien / 1tsp of mustard seeds
1 lyzica Channa dal / 1tbsp of Channa dal (bengal gram)
1 lyzica Urad dal / 1tbsp of Urid dal
par kari listkov / few curry leaves
1 stredne velka cervena cibula / 1medium size red onion
2cm x 2cm cerstvy zazvor; nastruhany alebo 1/4 lyzicky zazvorovej pasty / 2cm x 2cm od fresh ginger
1 zelena chilli papricka; zbavena semien a ziliek / 1 green chilli; seeds removed
hrst mrazeneho hrasku / handful of frozen green peas
2 mensie mrkvy; ocistene a nakrajane / 2 smaller carrots
2 mensie zemiaky; ocistene a nakrajane / 2 smaller potatoes
1/3 lyzicky mletej kurkumy / 1/3tsp of termaric (haldi)
1/3 lyzicky paliveho chilli korenia (mozete dat menej) / 1/3 tsp od chilli powder
sol / salt
2 male hrnceky vody / 2 small cups of water
koriandrova vnat; nasekana / coriander leaves
niekolko kesu orechov / few cashew nuts

AKO POSTUPOVAT:

V panvici zohrejeme ghee a na nom oprazime do slabo-hneda krupicu. Oprazame pomaly na slabom ohni. Treba byt trpezlivy, chvilku to trva. Oprazenu krupicu dame bokom. / Heat the ghee in a pan and fry rava until slightly brown. Fry slowly on low heat. Be patient, it takes a while. Keep roasted rava aside.

Vo woku zohrejeme trochu oleja. Pridame horcicne semienko a nechame ho prasknut. / In a wok heat the oil. Add mustard seeds and let them pop up.

Dalej pridame channa dal, urad dal a kari listky. Oprazame na slabom ohni, kym troska urad dal nezhnedne. / Next add channa dal, urid dal and curry leaves. Fry them on low heat until urid dal is slightly browned.

Pridame nadrobno nakrajanu cibulu, chilli papricku a zazvor. Pol minutky poprazime. / Add finely chopped onions, chillies and ginger. Fry half a minute.

Pridame zemiaky, mrkvu, hrasok. / Add chopped potatoes, carrots and green peas.

Pridame kurkumu, chilli korenie, sol. / Add termaric, chilli powder and salt.

Zalejeme 2 hrncekmi vody a dusime na slabom ohni, zakryte 15 minut. / Add 2 small cups of water and cook on low flame, covered for 15 minutes.

Po 15 minutach pridame oprazenu krupicu a miesame zlahka varechou, kym hmota nezhustne. Je to chvilka. / After 15 minutes add the roasted rava and stir lightly until it thickens. It doesn't take long.

Potom wok zakryjeme a odstavime z ohna. Kym sa nam to ulezi na suchej panvici na stredne silnom ohni si opecieme kesu orechy. / Cover the wok and remove from stove. Dry roast cashew nuts on tava, on medium flame.

Podavame ozdobene kesu orechami a posekanou koriandrovou vnatou. Treba jest teple. / Serve rava upma with roasted cashew nuts on top and some fresh, chopped coriander leaves.
