ČO POTREBUJETE (na 6ks):
400ml hrnček hladkej múky (Maida) / 400ml of flour Maida
soľ / salt
asi 200ml vody / approx. 200ml water
ghee alebo olej / ghee or oil
AKO POSTUPOVAŤ:
Z múky, soli a vody vymiesime nelepivé cesto. Dáme ho do misky a necháme odležať pol hodiny zakryté čistou kuchynskou utierkou. / Combine flour, salt and water and make a dough. Keep it in the bowl, cover with kitchen cloth and let it rest for 30min.
Cesto rozdelíme na guľky. Postupne pracujeme s každou zvlášť. Guľôčku rozvaľkáme na placku. / Divide the dough into same size parts. Work with each part separately. Shape each part into the ball. Roll the ball into flat bread.
Placku potrieme na jednej polovici s ghee, preložíme ju na 1/2 a znova potrieme na jednej polovicu s ghee. Opäť preložíme tak, že získame trojuholník. / Rub half of the paratha with ghee and fold in half. Again rub half with the ghee and fold. You will get small triangle.
Znova vyvaľkáme na podlhovastú placku. Nesmieme valčekom príliš tlačiť, lebo by sa nám zlepili vrstvy, ktoré sme vytvorili tým, že sme placku poprekladali a potreli s ghee. / Roll this triangle into long triangle shaped flat bread. Don't press too hard, be gentle with rolling.
Rozpálime panvicu a placku dáme opekať na stredne silný až miernejší oheň. Musí sa opekať pomaly, aby sa dobre prepiekla a nezostala surová. / Heat the tava and place paratha on it. Toast it on medium to low heat.
Keď sa začne troška nadvíhať a zo spodu máličko hnedne, obrátime ju popritláčame jemne čistou kuchynskou utierkou o panvicu a potrieme olejom. Hneď zasa obrátime a potrieme olejom. Chvíľku opekáme do hneda a znova obrátime. Dopečieme a uložíme do utierky. Pokračujeme so zbytkom cesta rovnako. / When you see paratha to lift up and it's slightly toasted flip it, press few times gently with clean kitchen cloth against the tava and rub with oil. Toast for a minute and flip. Toast it until it turns brownish and transfer to the plate. Wrap it in clean kitchen cloth to keep it warm. Continue same way with the rest of the dough.
Poznámka: s ghee to netreba preháňať, všetko s mierou. / Don't overdo it with the ghee.
